JONE 190 - COOKING WITH CHEF ROGER Credits: 1 The course has ten sessions. Each session has an appetizer, salad, soup, two entrees with different proteins, starches, and sauces, vegetable of the day, fresh baked bread, and excellent dessert. The last session is the grand buffet. The grand buffet consists of an array of fancy hors d'oeuvres, carving stations, and mouth-watering desserts. Each course would start with a small lecture, followed by different knife techniques for cutting fruit, vegetable, and meat. All sessions will follow the same cooking pattern: bread, desserts, soup, entree 1, entree 2, appetizer, and salad. The course is scheduled to meet in the North Servery. JONE 271 - EXPATRIATES:GLOBAL AND MOBILE Credits: 3 A seminar style course designed to provide a knowledge base and stimulate thinking about the expatriate experience that would result from at least one, if not several moves. Topics include, but are not limited to, background and context for international moves, theoretical considerations of living in non-native lands, family considerations, and other social, cultural, political, economic and environmental variables, practical matters, and benefits and challenges. A moderately large portion of the course will be spent considering personal and societal implications of growing up in a cross-cultural milieu.
